mead is pretty easy if you count that. Mix honey clean water, champagne yeast, flavoring fruits and spices. Let sit for a few weeks. Lots of guides on YouTube and Google but imo learning through experimenting is more fun
Oh, shit... I'll do it. So if everything goes to shit and you can make decent tasting alcohol, it can be used as a currency. But this is likely 5-10 years after the collapse though. I'm not sure what to do until then, but I think this is a good idea at that point.
Keep sterile, add brewer's wine yeast and an airlock. Ferment and let it mature for 1-2 months at room temperature then put into cellar (cold). Also we have a brewer's general you know.

You can leave out the acid blend, pectic enzyme and yeast nutrient if you dont have them. It won't be award winning, but you can probably get drunk off of it.
My go-to used to be:
4 gallons of wal-mart brand apple juice
a bag of sugar (5 lbs?)
a satchet of wine yeast
Dissolve the sugar in a gallon of juice on the stove, and mix with the rest of the juice in a 5 gallon water cooler jug. Add the yeast.
Wait 3 weeks or longer, pour back into the jugs the juice came in. Leave the sediment behind. Throw in your fridge, drink cold.
