Should be fine. A sound diffuser works using the shape and orientation of the surface(s) to reflect sound waves in a specific manner. Density and thickness only comes into play if you're trying to dampen or absorb sound rather than diffuse it.
I don't know what OP means by sound diffuser, but pic related is cool and weird at the same time. Even outdoors there is always some echo, but in a good anechoic chamber it's just fricking strange when you talk and your brain is used to at least a tiny bit of reflection.
Speaking of dampening sound, let's say you want max sound dampening, would a room within a room be the best bet? and just like putting the irregular insulation around the inner shell like this

For example if the inner wall was a thin sheet of fabric.
