The optical trick doesn't translate well to images being flashed at you on a flat surface (while Satan hides subliminal messages about fricking your male cat without you noticing).
Rendering what peep sights look like in real life and balancing that in a game or making it easy to use is nearly impossible. Some games do it alright such as Hunt: Showdown but even then they're balanced around blurring your FOV around the sight.
You have to turn your ironsight into a .png format like in Operation Flashpoint or ARMA Cold War
Or do it like Americas Army where you turn the peep sight into a semi-transparent 3D model which looks like shit
The .png method will not pass for audiences today and the 3D ghost peed sight has never been done correctly and the underpaid intern who modeled the ironsight wants you to appreciate every nook and cranny of that sight

I imagine differences in camera focal length as the model changes hands between people responsible for modeling and texturing, animators, lookdev artists etc
Same thing happens with likeness models for characters sometimes, so an artist will be given some photos of an actor or athlete but won't adjust their modeling software viewports to account for the fov that the photos were taken, resulting in blown out facial features and other shit

OP it's hard to even take PHOTOGRAPHS of peep sites or even optics that do them justice. They're designed around specifics of human eyeballs and the way our visual processing works.
Also most games, particularly ones like you're picturing, are first and foremost commercial endeavors aiming to be good games. Sometimes that involves trying to get extremely realistic on the extreme sim side of things, sometimes pure arcade-y. But even relatively (vs autistically) realistic sim-type games often don't have players really have to grapple with all sorts of actual realities of fighting.

Also I'll add this just came up in a /k/ optics thread not too long ago, anons (including me) were trying to take pictures though our optics to show what reticles and eyebox and sight picture and so on are like. It's shit to impossible with a smartphone at least. Like you can get a sort of reticle image sure, but even that is hard to get properly sharp along with the rest of the image, and the optic view gets all weird/distorted when combined with all the asymmetric element smartphone optics. And "sight picture", shooting at 1x both eyes open or whatever, I have no idea how to even try to convey that through a screen. It's about what's going on in your brain.
VR shooters do not have that problem, if they are well implemented sights work just like in real life. I'm even forced to use my left eye to aim being right handed because I'm cross-eyed dominant. Same for lining up iron sights, etc.
in RE4 the SL8 and AR would be way easier to use if the peeps were rendered properly. The M1903 is fine because for some reason they give it a v notch rear where the peep should be, so you can actually see over the sight to shoot
