Trek 100%. Don't buy online, go to a shop that sells Trek and get sized properly for it.
They have perfectly engineered good bikes starting around US$400 (I own one) and they're not only the bees breasts they're also a good company with great warranties, support, and frankly they're a company worth supporting in general.

Go to your local bike store and ask for the cheapest MTB since you don't care.
You pay for the brand and components (gears, breaks, suspension, wheels) and $500-700 is the low end.
You'll get a much better bike of you go up to $1000-1500.
A smaller brand with online sales (like canyon) can have the same or better components for a cheaper price than the big names.

get a canyon stoic and have more bike than you'll ever need for around 1k.
bikes in the sub 1k region can be fine but most are not really made for riding as a sport and a ton of them are actually shit and not worth the money at all.
regardless of price I'd check out canyon, trek and giant.

Question I’m looking at a used Jamis bike and it’s a L frame, since I’m 6’2 I know that I should be looking for an XL frame technically. The difference between the two sizes is only an inch of wheelbase and top tube, does that honestly matter a whole lot?
Do we really need 10 speeds? Seems excessive. Wouldn’t 5 be enough? This is a serious question.

Because you cant just slap a small and a huge gear next to each other and expect that the chain will climb onto it easily. You need the variety to have a smooth shifting even if you dont necessarily use all the gears evenly.

I actually do have a Trek Crossrip LTD hybrid gravel bike that I use as a road bike and sometimes do a little offroading on. Its a nice bike, I've had it for 5 years I think. It used to be my every day commuter when I decided I wanted to LARP as a bugman goy living in the city for a period. Now I just occasionally take it for rides in the mountains.

For that price, look at used bikes.
You'll get shit wheels where hubs will wear out at first contact with dirt and water going that cheap.
You are trying to buy a bike for less than one decent wheel.
The only way you get a half decent bike that cheap is used or stolen.
This. Or better yet, just buy a frame (you'll have to ride a few bikes to know what frame suits you) and build it yourself. It'll take forever and possibly be expensive but you'll at least have a bike worth riding.
I wouldn't say that this is the case in current year.
Bought a mountain bike for $700 new and everything is solid, including the upper mid tier shimano gearing. Even the suspension is pretty good though I usually keep it stiffened. You can get a lot of bike for that price these days.

The rockhopper is a legendary entry level MTB. But a Trek or Giant is also good.

i get bikes on nextdoor. lots of rich home owners who buy a bike, hate it, and dont actually need the money for it so they sell it cheap.
Polygon are bloody decent. I got my son an Xtrada and aside from the forks that I knew I’d be replacing anyway, it’s been outstanding. (There wasn’t anything wrong with them, I just wanted better ones).
Have since also bought a T7 and T8. Same specs as a fancy-brand bike that’s twice the price.
Check out Bikesonline. The US also has Pro’s Closet that seems good but possibly expensive way to buy second hand.

Anywhere dude,just get a bike and it will be fine. Garage sales,walmart,bike shops,facebook marketplace,craigslist,the nearest curb on garbage day.
Have a walmart fatbike from Mongoose and it's worked for me. Slow as frick but I've been using it to ride OSS train tracks for years and it hasn't failed on me. Don't spend money you can get on a car on a bike.
Get one on facebook marketpace with no rust and good sprokets
