The Hessians weren't mercs, they were Feudal Levies by the King of England and ruler of Hesse, the same guy.
They were literally supposed to be dude's that would throw early grenades. So they had to be strong and willing to get close enough to actually throw the grenades, so you recruited big strong tough dudes.
But like everything else, it became just a name to inflate egos.
light infantry were mostly skirmishers and carried less powder and ball because of that.

Grenadiers: used to be biggest dudes who threw grenades and charged in first, later just became biggest dudes when they stopped using grenades, and even more later just became a meaningless term that regiments inherited from the past like "Dragoons" and "Guards".

light infantry are skirmishers and scouts. loosely formed to avoid fire, fired accurately from afar to pick off enemy massed infantry, but will get destroyed if charged at.
grenadiers are shock infantry. better trained than most other infantry, stronger, may hold grenades, and you use them to charge and break enemy positions more reliably.
