You should have harvested the leaves off the plant while they were nice and full of turgor. You can take some of the big broadleaf but I wouldn't take more than 30% of the plan so that you can let it go to seed and replant for next year.

If you can get a few plants to flower and make seed pods you'll have enough seeds for the rest of your life.

How big do they get? How do you process them?
Rustica about 3 1/2 to 5 ft, others 6 1/5 plus.
They don't like wind too much and require soft soil for deep rooting.

the drying isn't hard at all, the fermenting is extremely hard to get right and not moldy or rancid.
