I'm not that well read on Apocalypse but from the comics I have seen him in he doesn't seem to have much of a personality beyond just being an evil butthole.
He got a little better when they finally explained why he was such an evil butthole. Turned out that he's from an ancient mutant civilization that got invaded by demons. They sealed themselves off in an alternate dimension so they could hold the demons back, but Apocalypse's wife told him he couldn't come battle the demons because he was too weak. She also took the kids with her. That's why he keeps making more Horsemen and why he's obsessed with trying to make the mutants stronger.
What the frick? I have his origin comic and he's some egyptian slave who rises to dominance with his mutant power and finds alien technology that augments him further, making him effectively immortal. You telling me they retconned all that?
I remember liking the first 2/3rds of the movie, but in typical capeshit fashion, it all just devolves down to a greenscreen fightfest in the third act, which was gay and lame. I am convinced Watchmen and Joker are the only good capeshit movies.
