Do you think I could build a log home to building code? Would they let me make one if I submitted plans, or would they say, it's not efficient enough for insulation or something odd?

The property is very off the main road, hard to find. Never would it have traditional electricity or water, yet I would need to put up solar panels, I wonder if they look on satellite photos to bust people just trying to live?

No information you get here is going to be better than just asking the authority you are 100% going to have to deal with anyway. From how your posts sound, "Just bust people trying to live" it sounds like you don't own the property yet, don't have a building plan yet, and are worried about the county citing you? If you are Californian you're probably from a bigger metro area, so one piece of advice to you from a fellow job-stealing, house buying, rent increasing commiefornian refugee to another is expect things to move much, much slower than in the city. You will need to actively try talking at a much slower pace if you want to fit in and want people to understand you, and small local governments will probably take multiple weeks to get back to you at the earliest.
