you're wrong. some of the modern blade steels are pretty insane in rust testing. I've seen videos of magnacut soaked in vinegar and salt for a week with 0 rust.

because a knife is a fraction of the size and requires far less mashing, cutting, shaping, and other processes to form it into the proper shape

Many guns are made of stainless when rust resistance is a concern. Otherwise its a different material for a different job, and the same properties that make it retain an edge well also make it a b***h to machine. They're different tools for different jobs.
