Too much tail. There's so much drag at the back of the plane the J-20 is overstable and doesn't want to turn quickly. Modern fighters are designed slightly unstable so when they turn they want to turn even more.
Compare that to the X-29. Very little going on on the tail. This makes the plane less stable and more likely to go into nearly uncontrollable flips and spins. There's a reason why the X-29 was experimental.

In a fight over Taiwan the US is reliant on carriers and the F-18. Trying to bring in other craft requires aerial refueling. These can mess with that. They can also go after platforms that help improve the effectiveness of missile defense for the carriers.
The J-20 isn't supposed to be shooting down fighters in dog fights but helping coordinate efforts to overwhelm fleet missile defense. You're going to have these small stealth missile boats firing missiles, subs firing missiles, longer range ballistics coming in fast, plane launched hypersonics, water hugging sub sonics, submersible drones, and torpedos all moving in from different angles to try to overwhelm the defenses or at least leave a room for the J-20 to pick of elements of the defenses until an attack works.
They're playing to their strengths and the fact that they just need to mission kill carriers to secure a blockade around Taiwan.
