Not sound like a vatnik, but we do that in the US too. You can tm apply to WOFT street to seat at 18 y/o or commission at 22 and graduate flight school by 23 as an 2LT then get deployed as soon you get to a unit.
Pilots do tend to be older, but even the old guys started out at LTs and WO1s at some point.
Isn't the USAF's preferred way of recruiting pilots grabbing smart fit guys straight out of HS as young as possible, because, your fighter pilot career likely ends at 35?

No, they just take applicants from their regular commissioning sources. It's actually not all that difficult to become a pilot. It's just a long process and most who even consider it self-eliminate before ever even trying.
Also the biggest factor is perfect eyesight
They grab guys with college degrees. Be it from an Academy or regular University/College. They accept guys into their 30s to go to flight school. I know a guy who’s 33 going right now.
You can only do "highschool to flight school" in the Army, I think.
Fighter pilot careers don't end because you're busted at 35, they end because as you go up the ranks you'll end up doing more officer bullshit than actually flying (unless your unit requires you to fly a lot). So a lot of pilots end up taking their experience to airline companies or private contractors.
The large majority of fighter pilots have a college degree (e.g. from the Air Force Academy). They come from the usual officer pipelines.
