It's a sliding window, so just leave it as is. As long as you don't fill it up with water, what's the issue?
If I raise the counter top it will be higher than the base of the window, leaving a nice pocket to fill with water and other things. Is the solution just to do it, and periodically vacuum the crevice occasionally?

That or replace the window.
Why do you want to turn something nice looking thats clean and functional into something stupid looking that will be gross and annoying to clean?

Don't do it unless you want to spend thousands.
You would have to cut into the wall and redo the window framing to make it smaller, and install a smaller window. Windows are a lot of work and precision. I don't think it's worth it
why do you want to raise the height?
OP is probably tall, and standard countertop height is ~ 36". 3 ft. Made for last centuries midgets.
You could raise the sink, and leave the countertop alone, since you're asking us, like you want to DIY it. Cutting surfaces can be raised with a butcherblock cutting board.
Yes I'm quite tall, and the bench is a very low work surface. It's my first house, and I've always wanted to renovate things to my preferred height.
Can't you just get one of the nice, big, thick cutting boards and work on it?
Put a piece of stainless or HDPE in the hole with a handle and pull it out periodically for easy cleaning
i like that sink. but they should be about 4 inches deeper and 6 inches wider
