Unfortunately you can't make compactors out of motors you borrowed, because then you wouldn't be able to return them!

Food processors are usually 1/2 hp+ but 1/3 hp is fine for crushing small things, just don’t expect it to be powerful like a garden shredder.
I would go with the left one because it’s multi speed and for slow applications, slower motors are usually better as you need a smaller transmission ratio and it’s easier to build. There’s not much to it, connect as it says on the label and it will spin at the indicated speed.

let's say you have 100 poles. how exactly would the rotor zoom past 50 of them on each half cycle?

No.
The 4 pole motor always has half the frequency. The field cycle is from ‘pole 1 and and 3 are north’ to ‘pole 2 and 4 are north’ and back. The rotor turns from pole 1 to 3 in one cycle and then from 3 to 1 in the next.

its not entirely dependent on the motor, you obviously need a gear reducer to give you the torque you need to crush the cans or compact trash. only other option besides motors and gearboxes is hydraulic system.
This anon is correct. What you want to build is a hydrualic ram. You don't need the motor at all. What would be simpler is to go to harbor freight and buy a bottle jack stand. Weld a metal box around it and then weld a square plate to the bottle jack that is barely smaller than the box.
Pic related is an actual trash compactor I serviced recently. It is a larger version of what I just described. I hope this helps.

In 3rd world countries theyve been using V belts from old cars and scooter crankshafts for applications like this forever. You put a big funnel or can inlet at the beginning of the stroke (like in a 2 stroke engine), and an outlet gate at the end that only opens when the piston/hammer is reversing. Alternatively a small tapered hole at the end (for eg food) so that that you get a nice long compressed/extruded “turd” or whatever you put in the funnel. Extremely simple to build compared to most diy hydraulic systems.
