Drinking distilled water is the only way to be 100% sure you're not ingesting any forever chemicals like pfas or whatever it is that's turning our kids autistic and our boys traps.
the problem with this idea is that you think you're always going to remember to empty the oven before you turn it on to preheat and cook, but sometimes humans forget things. It's like leaving your baby in the hot car "just for a second" to run in and grab something
your limiting factor is the condenser. if your condenser is too small your heat source can outpace its ability to cool and you'll be pissing steam out of the receiving flask. so do whatever you want and if you're still seeing a lot of steam escape, scale up the condenser.
the big thing to keep in mind is the copper coil needs to be clean. you don't want to be drinking grease and oil.

You can run the condenser in cold water.
Reverse osmosis systems can achieve 0 ppm levels too, unless you want to distill because you have to use shit water.
Regardless, 0 ppm water tastes off and I only use it in my coffee pot to prevent the buildup of minerals.
Look into salt water reef marine minerals, and a bulk fitting for a co2 charger.
