You might be prohibited from joining the Taiwanese military reserves, but in the event of a full-blown invasion, they're probably going to go full Ukrainian TDF and just start handing out assault rifles to anyone willing to use them. I doubt they're going to give a damn about your citizenship status.
What can you do in the interim? Build up skill sets. I have zero idea what Taiwan's gun laws are like, but even if private gun ownership is banned/restricted there might be gun ranges, rifle clubs, etc. you could go to. At the very least, there might be a shooting gallery with laser training non-guns.
Other than that, taking a first aid class is never a bad idea. Stockpile food and drinking water, know where to go if the air raid sirens go off, and things as minor as making sure there's fresh batteries in your flashlight.
It's not preparation for blowing up Type 99 tanks in the streets and shouting Wolverines, but with such minimal effort, you'll be less of a burden in an emergency than 99.9% of the population.
The closest thing Taiwan has for civilians is airshit carnival games at their night market. It's admittedly looks kinda fun; they have a spinning wheel with balloons placed around the circumference and you have to shoot them out to win.

This is the only serious answer in this thread and it's also valid for anyone everywhere since it's a bare minimum for someone to be prepared on such scenarios.
Since nobody else seems to know wtf they are talking about, here's what you need to do:
The U.S. does not have an official Embassy in China thanks to fucking Kissinger's satanic wickedness, but it does have the American Institute in Taiwan www.ait.org.tw which performs 99.5% of all Embassy functions, including aiding and repatriating U.S. citizens when necessary.
Call them, introduce yourself, tell them you don't know how best to proceed or how to leave if you want to, and/or what you should do if hostilities begin.
They will have every answer you need and if they know you're out there, they will attempt to reach you in an emergency.
It's advisable to do this in ANY country you plan to spend more than a few days in if traveling solo or in a small party.
So go make friends. Maybe they'll try and recruit you as a spook lol

If a war kicks off, America will evac their citizens, so get in touch with the American Institute and proceed to the evacuation locations. If you're early enough, you could probably even just take a commercial flight home.

Another good skill would be to learn how to camp in the mountains and be mostly self sufficient.

I don't know if you ever go back to the US for vacation or seeing family, but if so, that'd be a good opportunity to get some time in at a gun range. Despite what some people will tell you, you don't need a jillion hours of practice and a three-day tactical training course to learn how to use a long weapon reasonably well.
