Any lost would not only be an unimaginable hit to their total fleet, but it would be a massive PR loss if their invisible 5th gen aircraft gets knocked out of the sky just as easily as their other aircraft.
In reality, it's because the jet is barely functional if it was ever going to be completed in the first place. The stealth capability is sub-par with an RCS similar to an F-16, and the sensor suite is likely worse than most if not all NATO jets.
I remember there being reports of UFOs over Kiev a few months ago. I still firmly believe those were test runs for the few functioning SU-57s they held. Upon seeing they were detected, they grounded them permanently for the "special military operation" because they realized their stealth was trash and did not want it getting out, or worse, didn't want an irreplaceable aircraft getting shot down.
