Why do guns like ppsh41, 43 and vz.61 eject upwards?
1) is this not distracting your aim?
2) why would you work against gravity? down ejection should theoretically be better, even side ejection

It's mechanically simple.
what makes it simple? seems like there would be no difference between ejection port cut on top extractor on bottom of bolt and ejection port cut on right extractor on left of bolt.
i was meaning to ask this too, now 2 anons have already said it, but i can not think of why

Right. Now think about the rest of the gun, not just the barrel and bolt: Ejecting upwards is super easy because there's nothing in the way of the ejection port. Ejecting down is much more complex because now the fire control parts and the magazine are all in the way of ejection. It's not impossible, of course, but think about the specific guns you're talking about here: everything about them is designed to be as cheaply manufactured as possible.
Downwards ejection also comes with the problems of your fingers likely getting in the way. I find the DP-27 to be extraordinarily clunky in that it has a fucking grip safety and ejects downwards. Didn't enjoy shooting it very much tbf
I'm not talking about downward ejection. I'm talking about rightward ejection. Even bargain bin guns like highpoints can pull that off.
in the case of OP's picrel, there is a charging handle on the right side that is in the way

you can make like a sten side loading smg and then it should eject down no problem and this is also simple to build
but this is very specific and theory, i give it that
why would you do that instead of putting the magazine on the top and ejecting out the bottom. now you get the advantage of being able to go prone with any length mag, you have a nice flat firearm that can be doesn't want to twist sideways in a shooting position, and can be comfortably carried in a sling without bits sticking out in awkward directions.
It's one less axis to machine the bolt on in some designs
If you put on your serious thinking cap and look long and hard at that vz.61 it might come to you, specially the area to the side and below the chamber.
But also in general this:
in the same way the slide of a pistol moving doesn't distract you, you're focused on something far away and the moving part is moving too fast.
In the first place it happens so quickly that you don't really notice. In the second place it's mechanically slightly easy to design around. In the 3rd, gravity's effect on ejection is so minimal compared to the forces at play as to be almost meaningless. If you get a stovepipe in a vertically ejecting firearm, you'll most likely have one in a side ejecting firearm.
Also creates an ambidextrous platform, as others have said as well mechanically reliable as well.

The force used is already there from firing the gun so it doesn't really matter

You're not really paying attention to anything that isn't what's in front of the gun, however when hot brass starts raining on you you'll definitely be distracted

Brass, actually.
When you're shooting at someone who might shoot back you're liable to get tunnel vision as you fixate on the target. You probably won't even perceive the spent casings. Especially so if you're using full auto.
It's because you're supposed to hold it at an angle, contrary to what the sights would make you believe.
Especially the VZ-61.
1) Never had an issue with that, you barely notice it.
2) It's nice when there's somebody close to you, they don't get slapped with hot brass.
