Stop Buying Baileys!

Jameson Whisky: 500mL-750mL
Sweetened Condensed Milk: 800-900mL
Heavy/Whipping Cream: 1/2 cup or 120mL
3 tablespoons of honey
3 tablespoons of vanilla extract
2 tablespoons of cocoa powder (NOT SWEETENED)
1 tablespoon instant coffee
<1 tablespoon of ground nutmeg

>Pour your condensed milk, then your cream, then honey and vanilla.
>Mix all dry ingredients together, making sure to finely grind and mix them (especially the instant coffee, it needs to be broken up finely, and the cocoa powder clumps if not mixed thoroughly.
>Evenly distribute dry ingredients on top of wet. Start mixing, then pour whiskey in. Get everything roughly mixed together.
>From here, you can either hand mix/whisk in your bowl/container, or; use a blender or hand blender.

You will have about a litre of Irish cream with this recipe. You can easily add or take away from this recipe.

      I'm Canadian so my prices will be a lil different but I'll try and run it dow.

      The average, cheap bottle of Irish Liqueur 17%ALC 750mL is like $35 after tax. Not bad up front.

      The most expensive reoccurring costs are the condensed milk and whiskey. And kinda the whipping/heavy cream, but only because I cant find a bigger carton.

      So like ~$30/35 for the long-lasting ingredients. Each of these ingredients can produce approximately ~50 portions, but probably more, since One tablespoon is 15mL and most of the ingredients are upwards of 300.

      The cream is a weird outlier. At $9 for cream (8 portions), its not a super long term ingredient, but not a short term either.

      $3 per can of milk x3 = $9, and then whiskey size, but we'll use the 750mL for $40. Thats ~$50 for the more expensive reoccurring cost.

      Now i'm not sure what the equation would be to determine the savings, but: If it costs $50 (again worst case) per batch, but your long term costs are like $40, theres gotta be an equation to find where they even out.

      Anyway yeah I havent done the math but to me, spending less than $50 on the groceries and between $50-80 on the whiskey for multiple +1L batches is worth it.

        X*50+40 <= (Z*31)/0.75
        where X is the number of 1L batches you DIY IC, Z is the number of 750ml bottles of Bailey's. Adjust for the price of a bottle in your province.

          I drink every day. 2 ounces of irish cream in my morning coffee, and usually 2 Jameson&Gingerale at night - 1 when I get home from work, and 1 with dinner.

          I like making my own stuff, theres a cool feeling you get when you accomplish something.

No nutmeg or vanilla, though. Even if the price I can get a regular bottle isn't too bad it's still fun to make stuff so I will probably try it out anyway.

                It's perfectly legal to distill at home in Canada though.
                I think you need a license and aren't allowed to sell it to anyone unless you start a business and get it approved but if you just want to make some backyard hooch it's fine.
                I have a friend who got his distilling license and fricks around with weird grappas and stuff.

        I'm a brandy man myself. Tried just about everything in coffee, and brandy just hits the spot like nothing else. It has a liveliness that other liquors don't possess. Kahlua is my second choice.

          Always hated brandy after I drank too much as a teenager and threw up in my bed. But now I'm living in Spain and it's dirt cheap and I've got a taste for it. It's got that kick that feels like burning in your chest but doesn't smell on your breath at all for some reason. It doesn't have that lingering alcohol smell that you get from drinking most liquors.

    Just for the record I'm not saying this is bad or dangerous or saying not to do it...
    that said, if you make infusions that involve quantities of nutmeg larger than a pinch or two you really owe it to yourself to read up on the potential physiological effects of it, keeping in mind that there's people who overstate and understate the risks in the extreme. <1 TB won't kill you, even if you used 2TB in that recipe its unlikely that you'd drink it all in one sitting and even if you did you'd probably not experience much, but it has a cumulative effect and takes a while to come down if you do get affected...so over a couple of days you might have an issue.
    I only bring it up because I've had this happen with commercial mulled wine where they used nutmeg oil, and while my gf and I were fine the first night we had some, the next night we both had vivid and overwhelming nightmares and sleep paralysis that I recognized as the kind of reaction reported by people who deliberately tripped on it.
    Ever have a crazy nightmare where you wake up, breathe a sigh of relief and then slowly realized that you only woke up in your dream? Then you realize you're lucid dreaming and say frick this, I'm waking up and it works, then you breathe sigh of relief and then slowly realize that you only woke up in your dream? Then you do it about a half dozen times so that when you finally really are awake, you can't be sure for a few hours?

    To a person the people Ive known personally who did it on purpose all say its the worst trip they've ever done and while most people need more, a tablespoon of the powdered stuff infused in tea or liquor can be enough to make you wish you hadn't ingested it even if you don't get the 30-40 hour experience.
    I only bring it up because a lot of people have no clue that it can do this, and it's no fun at all. Enjoy.

      Nutmeg requires eating a few table spoons all at once and it only lasts a few hours not a few days. If he drank that fast enough to get the very minor effects of one table spoon of nutmeg the alcohol would completely overshadow it, he would not even notice. If your mulled wine story were true it would be happening all over the western world every holiday season. Get some perspective.

        I could have linked to dozens of pages of people describing their experiences (BOTH good and bad) and dosages that were not excessive or very large at all, but I didn't because they're full of morons such as yourself who spread questionable one-size-fits-all notions of what is or isn't safe and dismiss even the mildest suggestion to be safe and smart about it, many of them quite obviously because they think it's funny that people might take their advice and be miserable for a couple of days.

      Thanks for the advice friend! Luckily theres less than a tablespoon in the more-than-1L batch, so unless someone drinks it all in one go, I doubt thered be an issue. But definitely good to look into!

    You look at these ingredients and realize it’s mostly sugar, yeah? Even whisky itself has high amounts of sugar, not to mention alcohol affects your blood sugar levels. You could liquify candybars and probably not reach this amount of sugar.

    Canada has government booze. The general baseline price for the cheapest alcohol is around the $1.00CAD/ounce. Price improvements by way of high proof white rums, etc., are very rarely, if at all, available. There are also strange import restrictions on stills (as in picrel) -- the purchaser has to make a legally (nafta?) valid claim of use application.

      Apparently, the guy claims that this is the original recipe for Baileys. You can theoretically sub a can or two for evaporated milk, but you definitely need some condensed for that sweetness.

    after having bourbon cream one single time, i am never going back to baileys.

    you owe it to yourself to try it, if you can get it (i've had a hard time finding it outside of kentucky). it is so much more SMOOTH than baileys which has such a hard alcohol kick to it. it's so smooth it's delicious by itself over ice, but my favorite is just in coffee.
