Eurofail doesn't even have gold plating on canopy, cockpit alone makes 1m2 RCS minimum.

KF-21 is stealthy in clean configuration, the problem is without weapons bays it won't be flying clean in combat
It's not stealth. Detection range is 100+ miles against realistic threats.
It's not really intended to be STEALTHY, it's just low observability, the only true stealth fighter south Korea will have is the F-35.

Because it's the best they have. Momentary slips in enemy discipline allowing them to claim those victories against a vastly superior adversary. It's especially good for propaganda/morale raising purposes when you manage to do something that's initially/publicly deemed as impossible, such as seeing a stealth aircraft.
