I am building a stone wall on a place which has boundary contentions. I'm in the right but I'm worried about my neighbors sabotaging me.
What things should I look out for to male sure they don't do to frick up my wall. I.e can they pour any liquid into the wall at night or as its been built that will mean in the future its very weak and will crumble?

If you haven't already, you should have it professionally surveyed and staked before you build anything.
The reason to get a current survey is pre-empting any shit they might pull.

If you doubt this see a fricking lawyer. Assumption is the mother of all frickups. Then post more than one camera (and perhaps a dummy camera so you can catch them destroying that!).

This. It won't protect your wall but if they get caught on film destroying it that would put a big dent in their case when they argue for different borders.

If the mortar is fully set, then yeah it would be annoying to deal with. But if it's a cement-based mortar, then you need to watch out for sugar sabotage.
What about covering the wall with a plastic sheet/tarp when you leave it overnight? Take pictures of the stones you use to hold it down, so you can clearly see if the sheet has been moved and replaced.

You're just going to give away part of your land to your neighbours by doing that. Get it surveyed, and then build your wall.

This. Have a surveyor come out and stake the lot boundaries based on the officially documented zoning, it should not cost much. In many cases there will even be metal stakes that have been driven below ground at the lot corners for them to locate with a metal detector.
Once that's done, then build your wall as close to the perimeter as possible so you're not unintentionally giving away any of your land.
Also check with the authorities as to whether you should be getting a permit to build it, and to see if there are any regulations dictating maximum fence heights or a required setback from a property line or anything like that. Because if you don't do that and it turns out that where you live you are required to permit it or if it's too high or if there was some required setback from the property line, then the neighbor could report what you're doing and get you fined.
If a permit was required and you don't get one, or if it's built where it should not have been built, and the neighbor does something to it there may be nothing you can do since it shouldn't have been there in the first place.
As for sabotage, there's not much you can do. You can't realistically keep someone from doing something to the wall, and if all you've done is something that lets you know if someone has done something, there would be no solid evidence to prove who did it for you to use if you were to go after them for damages. If you really have concerns over sabotage, you should just set up a camera. Weatherproof wifi cameras don't cost too much. If you've got video proof of your neighbor damaging it you're all set.
TL;DR - Always cover your ass as well as you possibly can when vindictive butthole neighbors are a concern.

Rent skid steer with a dirt auger attachment. Drill holes 1 foot wide, 5 foot spacing, 4 feet deep, place mulch 1 foot thick in bottoms of holes. Backfill holes and compact to ground level. Op goes and digs 2 foot footer for wall and builds wall. In 5 years mulch rots and wall sags and buckles and is completely fricked.

Sure, totally not OP. I can help you with this topic that isn't why NOT you made this thread in the first place.
Jog on down to your local NASA and ask for about a 55 gallon drum of their solid fuel from their booster rockets. You'll also need the pre igniter to get it lit. It burns hot enough to make concrete boil so it should melt the wall. Try to avoid eating the fuel or teabagging it with your balls because of cancer. Remember, it needs to be the solid fuel booster. The main rocket just makes water from two gasses. That won't help you as much.
Why not pay and get a surveyor?
