It’s always Germans, and is a symptom of too much individualism allowed in police forces they already have a problem with too much right wing or vatnik infiltration. Underneath the “radical” garb are probably some tattoos that would raise eyebrows.

kind of, immigrants and knife attacks in southern europe and germany has lead to this. It's only used in certain cases, nothing widespread

Is chainmail a decent option if I fear stabbings

its certainly provides much better airflow than comparable stab proof vest... but wont protect from ice picks

Well, it worked as a pretty good defence against knives and swords for a couple of thousand years.

Sewn in kevlar backer for the chainmail, like the one the british police use

Probably not, at least nothing practical.
Still, a hauberk is surpisingly light once it's belted off at the waist. I'd be down with just making it tradition to wear them under normal gear anyways, assuming it's not a stealth op because those things will jingle

The main weakness of mail is resisting penetration and thrusting force, i doubt you could really spread out the energy of a bullet

Why not sandwich it between kevlar to prevent spalling? Heard the big issue that made it suck to wear in WWI was how when it broke it got stuck in the bullet wounds.

Reminder, in some European countries noble people still have certain special rights, amongst other things they can legally resist arrest by challenging the officers to a duel. This is what happened here and for some 1100 year old law the officer had to put on chain mail for the customary staff fight. Most larger police forces have for this reason special officers trained in the knightly arts.
