        I start by cutting the throat completely, removing the testicles and cutting around the penis all the way back to the rectum.
        Then cut around the rectum until it is free.
        Then make your first incision into the abdominal cavity and reach in and pull the rectum from the top. That should pull the penis and rectum up and free of the body without the bladder leaking on the meat.
        Then you carefully slice all the way up to the sternum without cutting the guts. Then reach up and punch through the diaphragm. Reach past the lungs and grab the base of the wind pipe/esophagus. Pull Them down and you should get the heart, lungs and all the guts free to pull out. You might need to cut some connective tissue while you're rolling the guts out.

        That's because you're not trying to take a squirrel's antlers.

        I've never done anything with antlers. The largest rack I've ever got is still out in my dad's garage somewhere

            Most of the blood should be drained by cutting the throat and tilting the head downhill. There is surprisingly little blood after that.
            Any offensive smells usually come from a punctured gut. You won't smell anything but the deer's musk (quite strong for mule deer) if you are careful.
            But if you do screw up. Well, it still makes me gag. Step back, collect yourself, and get back in there.
            Also keep in mind that mountain men used to eat the chyme to get vitamins you can't get from meat. Basically using the animal's superior digestive system as a supplement

            I started as an adult. Been hunting/butchering livestock for 4 years now and it still freaks me out a little but it gets easier the more you do it. I wouldn't say I get grossed out in the sense that I want to puke, it's just unsettling touching warm organs. But once the skin is off and the guts are out it's just meat to me

            I have no experience with deer, but hunting rabbits usually using a shotgun will burst the guts and make them smell horrible, with air rifle or .22 short it usually keeps the guts intact and the smell is not that bad.

            But the smell lingers on you, you feel it all the time, cooking the meat, eating it, and shitting it afterwards. You get used to it eventually. It must be like we must smell of dead cow and pig but we're very used to it.

              I have found that bile tainted venison can be salvaged by soaking it in distilled white vinegar.
              Granted, it tastes like sauerbraten after that, but you make some mushroom gravy, egg noodles, and some stewed red cabbage; and you'll have a feast fit for a Hessen king.

        I think it has something to do with not wanting people to wound a bunch of animals, the brain is a fairly small target compared to the vital organs. Seen pictures where the deer had its lower jaw blown off, not a very nice death. Also if you plan on mounting you don't want to blow its head off.

Broken arrow ranch in Texas will take long range head shots on their deer and elk because I would imagine an instant kill is the most humane, but I also imagine they're pretty good shots. I spoke to the guy in charge of field operations and he said it's extremely rare he needs to hit it twice.

        Too high a chance to miss and terribly injure the animal instead of delivering a quick death. Same reason cops aim for the torso but they're trying to avoid hitting anything around the target rather than avoid wounding the target.

        having said that professional deer stalkers/game keepers here in Scotland will often take headshots when conducting hind culls. When you're shooting dozens of deer in quick succession on the open hill it makes a significant difference to the price you get for the venison at the game dealer.
        It also means the deer drop where they are standing, unlike when shooting at vitals when you occasionally get runners.
        Not only do the runners spook the other deer in the herd but collecting these runners adds extra time and effort.

        It sounds like, don't try it if you're not that good, right?         for sure headshots should be reserved until you're an experienced and competent shot, but regardless of how good you're it's still an increased risk. it's impossible to account for every gust of wind or an unexpect movement of the deers head just as you fire.
        if you're a recreational shooter I don't think you should be taking headshots.

          There's a problem with applying deer hunting methods to different regions.
          Mule Deer are the easiest deer to shoot because they run 150 yards away from you and stand there. Staring at you for a good minute. Completely still
          This was probably a good strategy back when they only had to worry about Indians with bundle bows. But not so much today.

      I understand why headshots are recommended against. But I just barely got this deer broke down and it strikes me that it saved a substantial amount of meat. Maybe if I were to switch to short range hunting with a 450 bushmaster or another big thumper, you could reliably incapacitate them even with jaw shots.
      Then just walk up and cut the throat.

        The brain is a very small target. The heart/lung region is a larger target that will almost immediately drop a deer. There is also pretty much no meat to waste in the vital area.
        I use 12ga slugs and have never had a deer run more than 10 yards after being hit.

      you don't want headshots because being off-target can wound a deer in a way that lets them run off without dying right away (ex. crippling the lower jaw). CWD is a concern, but it exists in the CNS of the deer and you/the environment would be exposed to the brain/spinal fluid during the quater/butcher process anyway. different states have different procedures for CWD: some say it's fine to eat when cooked properly while others say to trash the whole deer in the case of a positive test.
