depends on who was reffing, generally a neck or groin touch was a stop, also a hard stab, otherwise we'd go until it was clear the vic was going to be dead or worse.
interestingly, once the knife player got dominance, they usually never gave it up again, because even if the vic had control of the hand with the knife, once they lost it, they were playing catchup after that which means you lose.
so basically after the gap is closed, you get one shot to get ahead of the knife player and control the knife and if you miss or get it and lose it, you lose.
running away works until they got you in a corner and reliably somebody would go for the big hiyaa and drop kick the attacker, that only works once tho
If there's only one weapon involved you better get it. Pretty sure that's how knife on knife fights are supposed to go too. Parry with your off hand and let them slice it up while you go for a stab.

Took Krav Maga for three years. Lots of knife defense training with rubber knives. There's very little I fear more than fighting someone else that has a knife. Get as much distance as you can, find an exit. Failing that, a front defense kick works in keeping distance. But in all likelihood,
you're gonna get stabbed. A lot.

Don't turn your back or run away unless you're confident you have the advantage and can escape. So either you think you're faster, can trip or incapacitate him, or create some sort of distraction. And obviously it's no good if there's nowhere to go like that guy on the subway.
And remember, if you're in a knife fight the guy is trying to KILL YOU and the only way to survive is to make him UNABLE TO. So either you have to break his arms/legs, knock him out, or kill him. And you've got to do this probably in a single move in less than a coupe seconds. So unless you're mike tyson with brass knuckles punches are totally pointless and will get you killed. At absolute minimum you need a rock or a hard piece of metal. If you've got nothing then you've got to take the knife.
