Firepower doesn't matter as long as you hit the red barrel they are standing next to.

Is putting red barrels at the door a good home defense strategy?

Yes, the explosion only effects living things and there will be no property damage as long as there aren't extremely obvious cracks on the wall.

Sometimes it might light small eternal fires in its place though, which is terribly inconvinient when it takes the spot for your coat rack.

A single projectile is unlikely to do a full on gib, it would have to either be extremely large or be moving incredibly fast(preferably both), to do anything other and bisect the region of the body that it hit.
Explosives are much more likely to do the trick, otherwise you would have to scale up to something that's not man portable.
I guess defining what your expectations are for a "gib" is important, simply detaching head and limbs from torso would probably be easier than turning someone into full-on paste.
Short answer: more than is man-portable without involving some kind of high-ex

I wonder what happens if a person is hit with a HEAT round. Bodies aren't hard enough to set off the warhead, right?

I remember watching a old history channel show about the Gulf War and a Abrams gunner they interviewed said he shot a Iraqi in the chest with a 120mm HEAT and it passed right thru him leaving a perfectly clean round hole.

        >perfectly clean round hole
Sounds like bullshit. The sheer hydrostatic shock would rip the guy apart.

        Why?

Here is what you're talking about the crewman said the enemy guy was 'imploded' and 'picked up and thrown away like a leaf'.
