What do you do for storage? Can anyone recommend a nice gun locker/cabinet/safe that has a decent fireproof rating. I’d like it to pull double duty for document storage. Ideally space for 5 or more long guns.

No safe is going to stop a profressional.
Nearly all safes will stop a crack head or delinquent.
Safes are rated in minutes, both for security and fire.
Those thick doors on safes are mostly fire insulation.
One way to check the thickness of metal in a safe is to swing the door, feel how much weight is actually there.

The doors on safes are purposefully deceptive. They are made significantly thicker and heavier than the rest of the safe. Most safes under $5k only have 10 gauge sheet metal walls at most. Never use a safe door to assess the thickness of the rest of the safe.
Fireproofing is basically all false unless you're paying well over 10k. You get a couple minutes, at absolute best. Unless you live literally next door to the fire department it won't matter unless you're getting a serious 5 figure safe.
Build a basement room with concrete and cinder blocks then put a vault door on that.
Do wall mounts, it's fun.
I just use an old Homak gun cabinet that I added some handgun holders to, it works well enough.
For everything else that doesn't fit in the safe I have locked in their cases or still in their original box.
I probably would've gone with something that's larger/more heavy duty, but this safe ended up being a gift, so I can't complain.

Buy an old broken freezer and add a lock. Shelves and felt if you want to get fancy. Congratulations you made a fire resistant safe no one will look twice at for maybe $150.
Based. I love a good “in plain sight” play. I intend to toss my little lock box with my 2 precious hand guns at the bottom of a cheap cardboard box and pile some old clothes and socks on top. No thief is desperate enough to go through old clothing storage. Even with hours of looting.
