Modern wars have been fought and won without plates even, but even some plates under clothes or a leaf suit would be light and covert. This is like a modern knight in full plate armor, but it is standard issue for many modern forces.
On a strategic level, I think what is more important than the weapons and equipment is actually winning the war, but it is still a detail that can't be overlooked.

Rescuing hostages fits exactly their mission profile. And since Israel is a somewhat allied nation I could definetly see them (=KSK/KSM) being used to rescue hostages in Gaza. Since we're talking about one giant clusterfuck of an area and lots of hostages the IDF SF units alone might not be enough so they could/would use a helping hand.
Keep in mind: When Kabul was falling the Germans also sent KSK and SF Helo units if a situation arose where germans or other foreign nationals had to be airlifted out of already overrun areas.
At the end of the day all these deployments right now are just measures of precaution. Just to have them as close as possible if the need arises.
