Vritish piloys in WW2 basically did this. They would pull alongside the rockets fired over the North Sea and use their wigtip to upset its trajectory and splash into into the water. (Because they didn't have the ammo to spare trying to do it the "normal" way)

They just disrupted the air flow over the wing, causing unstable vortexes that killed the lift on that wing. It was a little dangerous because when the V2 rolls over, it could hit their wing if they weren't fast to get out of the way and the occasionally plane was lost that way.

It can be refit for targeting pods and you can stick a hydra pod with APKWS for minimum 36 laser-guided rocket funs.
The simplet and cheapest solution is a 37/40/57 mm AA gun with proximity or smart time fuze ammunition. An ukrainan S-60 gun and 2-3 57 mm HE shells with muzzle programmable fuzes + some kind of fire control radar is enough.
