the reason you get an external safety on a handgun is that if a Future Doctor manages to disarm you they don't know how to "turn the gun on". Numerous demonstrations by Massad Ayoob demonstrate that non-gun people can't figure out manual safeties on pistols, and my own experiments confirm this. The sig has a decent grip angle. Even the clones and 80% kits of glock recognize and fix this problem by making there copies have a grip angle similar to the 1911.
Honestly I really like the gen 3 Glock grip. I'm probably in the minority but I find it fits my hand great and I like the angle. I will say the P80 grip angle is pretty nice too though, I like them both equally as much.

Its an 80% frame, so you have to manually mill out some polymer to use it (the benefit being that it's an unserialized frame). A buddy of mine has a few, they shoot really nice actually. Super comfortable in the hand. Same as any other polymer frame 9mm.

The problem is nobody ever does this. Having two compatible guns and doing a 5 second slide swap on the way out the door is plausible, pulling out the FCU on a whim is never going to happen.
If anyone can somehow jigger the regs so that the slide is the gun (the sensible way around) I'll give them big credit, but this is marketing wank. It's questionably useful even if you have quartermasters and armourers on staff.
It isn't, you're probably going to need to find something to punch out and tap in the takedown lever and it can take a bit of jiggling to get everything in place, and personally I wouldn't be carrying anything with a fully wienered striker without a good bit of function checking first.
