what happened here is a big case of trampling, enemies on the front see the knight and try to fight him but he block them meanwhile enemies on the rear don't see it and keep pushing foward not knowing what is happening on the front, those in the middle get caught in that mess and panic, now those in the middle try to push back instead of going forward and die from suffocation
This but also if the bridge is narrow enough and one or two horses die or get incapacitated at the entrance youre gonna have a bitch of a time getting over that while someone is trying to stop you. Narrow spaces like that are the perfect place to nullify numerical advantages like that
The single knight would run out of gas and be exhausted within a few minutes. Look at ultimate fighting and boxing. They are gasping for air and exhausted after a 3 to 5 minute long round depending on the sport.

their training consisted largely of cardio, running, vaulting fences, dancing jigs, etc all in 20-30kg of armor for an hour or more
they still used Roman military manuals too so it is also possible they followed their practice of using training swords and shields heavier than the real ones
