Realistically speaking, what are the differences? Can I get away with using the Black Hills ammo to sight in my rifle, and then train with the cheaper S&B?

Without sampling the powder loads across multiple rounds for both, it's just going to be a SWAG. But I'm going to guess the Black Hills have a smaller varience in powder loads across all cartridges than S&B, and probably higher mass of powder as well.
Only way to know for sure is to shoot some of both and see how they both group out of your barrel.
As long as there's not a major POI shift, then I don't see any reason to not use the S&B if it's just for leisure time at the range. I expect the cheaper ammo to have wider groups, but that's just normal.

The Black Hills claims 2750 fps, and the S&B claims 2825 fps. No idea about the ballistic coefficients.

I've seen some velocity comparison of multitude of 5.56 ammo done by a guy on arfcom and the S&B 77gr he has on that list it was going way slower than Black hills offering and several other with similar gr(72-78) ammo.

Not any of them, but large parts of the country almost never have any shots beyond 300yd anon. I live in northern NH and northern vermont, new hampshire and maine are all full of dense woods and mountainous terraine too low to get you above tree line but plenty to shrink LOS. Almost all my hunting in my life has been <200yd, and most <150yd. There just aren't that many safe clean shots at long distance. Even for fun shooting, even if you own hundreds of acres, you'd have to clear a pretty long distance or have some larger fields you hay or grow corn on or whatever. My main hay field as well is only 380 yd or so on the longest dimension.
As it happens I do have 308 anyway because there is a little bit of fun 650yd stuff to do and rare uses and I just like it, but there is nothing wrong with 556 for most usage, let alone range fun or home defense.
Uh, this should be a serious consideration for sbr's if its consistent enough.
Hopefully its decent for the long range stuff
